Aaratikaya Fry/Plantain fry

Ingredients:


Plantains  2

Onion 1

Green chillies 3

Coriander/Dhania  powder 1 teaspoon

Chanadal 1tsp

Mustard seeds 1 tsp

Cumin seeds 1 tsp


Preesure cook the plantain for one whistle and peel the skin and cut into bite sized pieces.Heat a Pan with two table spoons oil.When the oil is hot add chanadal,mustard seeds,cumin seeds,broken red chillies,and a crushed garlic pod.Add the curry leaves and saute.Add the onion and greenchillies and saute till the onions turn light brown color.Add the plantain pieces ,sprinkle salt and coriander powder and saute so that the plantain pieces are coated with the corriander powder ,salt and onions.keep on medium heat for three to four minutes while sauting frequently so that it doesnot get burned.However have to be careful so that the already cooked plantain pieces do not get mashed with the frequent sauting.We can add a teaspoon of red chillie powder for more spicyness,adjust the salt.Serve with hot rice.
