Another vegetable,i was not keen on but started cooking more often.Thanks to my friend who shared her recipe with me.
Ingredients:
BeetRoot 1 chopped finely
Onion(small) 1 chopped finely
Green chillie 3
Ginger half inch finely diced
Garlic pods 2 finely diced
Heat a pan add 2 tablespoons oil ,when the oil is hot add chanadal ,mustard seeds,cumin,redchillies and curryleaves.when the mustard seeds starts to spultter add the chopped onions,green chillies.Add little salt and a pinch of turmeric powder.when the onion is slightly changing color add the garlic and ginger.After a minute add the beetroot.Add salt according to taste,cover with a lid and keep on low flame for sometime .Uncover and keep sauting ,so that the beetroot at the bottom doesnt get burned.After few minutes add redchillie powder according to your taste(optional).Garnish with cilantro and serve with white rice or chapathi.

Beetroot is really delicious. I find it hard to cut a beetroot. So a friend told me that she wraps each beetroot separately in foil and keeps them on a baking pan and bakes at 400 deg F till they are soft may be 40min. That really helped me to cook beetroot more often. I also noticed that adding lots of curry leaves to this dish really compliments the flavor :)

hmm thats a nice idea for cutting beetroot.I just cut them into small pieces and use the food processor to give them the grated look.
Another way is just cut the beetroot into thinslices and then cut each slice.
