Thotakura Egg burji

I try to add more of leafy vegetables in our daily diet trying my hand at every receipe that looks promising to win over my kidos.I frequently make egg burji(not bcause i like it or something,but it is easy and fast to make :))My kids dont complain about it,infact they like it.Whenever i suspect there will be chances of food combat...i will make egg curry matter solved.I met a friend recently and learned some receipes from her...this thotakure eggburji is one of them.Its like One gunshot that will hit two targets.

Note:The same process can be made with Palakura /spinach also.

Ingredients:


  • 3 Eggs


  • One Bunch of Amarnath leaves


  • 4-5 green chillies,cut lenghtwise and made smallpieces


  • 1 medium sized onion chopped


  • 4-5 curry leaves


Take a wok and heat it.when the wok is warm add 2 tablespoons oil.when the oil is hot add few chanadal,mustard seeds cumin and red chillie deseeded.Add curry leaves and saute.A nice aroma spreads around when you add the curryleaves.Add the chopped onion and green chillie.when the onion starts to change color,add the finely chopped amarnath leaves.We can add only the leaves ignoring the stem part.But i usually use the stem too,i just discard only the bottom part of the stem(maybe a inch or so).Add a pinch of tumeric and teaspoon salt.keep sauting until the water that ozzoes out of the leaves start evaporating ,now add the eggs.keep sauting till the leaves are covered in the egg.saute for few minutesand then cover with the lid and cook over low heat for 10minutes.Take of the lid,and keep sauting.It is the same process as making egg burji.....in this we add the thotakura leaves first.

Rachana, thank you for another yummy recipe with a unique twist. I haven't heard of mixing greens in this dish. I'll definitely try it soon. Hope you are well.
