Plantain is a rich source of vitamins.Of the very few varieties in cooking plantain,the perugu pachadi is a variety i remember my grandmother used to make.
Ingredients:
Plantain 1
Green chillies 6-8
Curd 3-4 tablespoons
Tamarind paste
Cumin seeds
Garlic cloves 2
Cook the Plantain ,remove the peel ,gently mash it with a spoon and keep aside.I usually pressure cook it with the skin and then remove the skin.We can also peel the skin before and cook in a microwave too.Heat a small skillet with a teaspoon oil and saute the green chillies,till they loose there raw flavor.In a mixie jar,take the cooked plaintain,the sauted chillies,tamarindpaste and add some salt.Grind for one minute ,then add the curd ,cumin seeds and a crushed garlic and grind for another time.Curd helps the goovy plaintain and the chillies to gring smoothly.Remove in a bowl ,adjust the salt and season it.Garnish with very finely chopped clinatro,it tastes very good with Hot Rice.

Rachana, I completely forgot that I used to make Aratikaya pachadi (long time ago). Thank you for reminding and also for the instructions. We'll get some plantains when we go to the groceries next time and will try this recipe :)
